Food Yield Calculator: How to Figure Out Yield Percentage for Any Ingredient

You bought 50 pounds of onions. You didn't serve 50 pounds of onions. After peeling and trimming, you've got maybe 42 pounds of usable onion on the line. That gap is costing you real money, and if your recipe costing doesn't account for it, every plate cost on your menu is wrong.

What Is Food Yield?

Yield is the percentage of an ingredient that's actually usable after you prep it. Peel it, trim it, debone it, core it, cook it. Whatever's left that you can actually plate is your yield.

The concept matters because you pay for what you bought (As Purchased, or AP weight), but you recipe-cost based on what actually reaches the plate (Edible Portion, or EP weight). Those two numbers are almost never the same.

If your costing spreadsheet uses the invoice price and doesn't adjust for yield, your recipe costs look lower than they actually are. That is a problem you will discover at the worst possible time.

The Yield Percentage Formula

Here is the calculation:

Yield % = (Edible Portion weight ÷ As Purchased weight) × 100

That's it. Weigh what you bought. Prep it the way you normally would. Weigh what's usable. Divide the second number by the first.

A Worked Example: Whole Onions

Say you buy a 10-pound bag of yellow onions for $0.90 per pound. Your AP cost is $9.00.

After peeling and trimming the root and stem ends, you weigh what's left. You get 8.5 pounds of usable onion.

Yield: 8.5 ÷ 10 = 85%

Now, your recipe calls for 2 ounces of diced onion per portion. That's 2 ounces of usable, prepped onion. To figure out what that onion actually costs you per portion, you need the EP cost:

EP cost per pound = AP cost per pound ÷ Yield %

$0.90 ÷ 0.85 = $1.06 per pound

Two ounces of that costs you $0.13. If you had used the raw AP price, you'd have calculated $0.11. Two cents on one ingredient, on one portion. Multiply it across every ingredient in every recipe on your menu.

Standard Yield Percentages for Common Ingredients

You don't have to run a yield test on every single item you buy. Decades of culinary reference data, from textbooks like Food for Fifty and the USDA's published food yield tables, have established approximate yields for most common ingredients. Use these as a starting point:

These are starting points. Your actual yield will vary based on the quality of your produce, your prep methods, and how aggressive your cooks are with the peeler. Which brings us to the next part.

When You Should Run Your Own Yield Test

The published tables are fine for rough estimates. They're not good enough for your three or four most expensive ingredients.

Run your own yield test when:

  1. You buy proteins in whole or bone-in form. Whole chicken, bone-in pork, whole fish. These have the biggest AP-to-EP gaps and the most variability between suppliers.
  2. You process large volumes of produce. If you peel 100 pounds of potatoes a week, a 5% difference between your actual yield and the textbook number is 5 pounds of potato you're miscounting. Every week. All year.
  3. You portion by cooked weight. Cooking shrinkage is a separate loss on top of trim yield, and it varies by cooking method and doneness.

For dry goods like flour, sugar, salt, and oil, the yield is close enough to 100% that you can skip the test. Don't waste a Friday afternoon yield-testing your all-purpose flour.

How to Run a Yield Test

This takes about 15 minutes per ingredient. Pick one and do it today.

Step 1: Weigh the ingredient as purchased. Write it down. This is your AP weight.

Step 2: Prep it. Peel, trim, debone, core. Do it exactly the way your line cooks do it. If your prep cook is aggressive with the peeler, be aggressive too. This isn't about being perfect. It's about matching what actually happens in your kitchen.

Step 3: Weigh what's left. This is your EP weight.

Step 4: Do the math. EP weight ÷ AP weight = yield percentage.

Step 5: Calculate your EP cost. AP cost per pound ÷ yield = EP cost per pound.

Update that ingredient's cost in your recipe costing system. Then look at what happens to the recipes that use it.

Cooking Shrinkage: The Second Yield Loss

Trim yield tells you how much usable product you get after prep. But most proteins also lose weight during cooking. Moisture evaporates. Fat renders out. The USDA has published cooking yield data for many meats, and the numbers are consistent enough to plan around:

  • Roasted beef or pork: 20-30% shrinkage
  • Grilled burgers: 20-25% shrinkage
  • Roasted chicken: 18-22% shrinkage
  • Pan-fried fish: 15-20% shrinkage

If your recipe says "6 oz cooked ground beef" and you cost it at the raw weight from the package, you're understating the cost by roughly 25%. You need to start with about 8 ounces of raw beef to end up with 6 ounces on the plate.

To figure out your own cooking yield, weigh a test batch raw, cook it the way you normally would, weigh it cooked, and do the same division.

Total Yield: When Trim and Cooking Loss Stack

For ingredients that are both trimmed and cooked, the losses compound. They don't add. They multiply.

A whole chicken that yields 65% after boning, then loses another 20% during roasting, gives you:

0.65 × 0.80 = 0.52, or 52% total yield

If you paid $1.89 per pound for that chicken, your true cost of usable cooked meat is $1.89 ÷ 0.52 = $3.63 per pound. Not $1.89. Not $2.91. $3.63.

That's the number that belongs in your recipe cost.

Why Most Spreadsheets Get This Wrong

Most spreadsheet templates and basic food cost calculators use the invoice price as the ingredient cost. They don't ask about yield. They don't ask about trim loss or cooking shrinkage. You type in "$1.89/lb for chicken" and it spits out a recipe cost based on that number.

The result is recipe costs that look 5-10% lower than reality. Menu prices set against those costs. Margins that erode every month until you can't figure out why the numbers don't add up.

The invoice price is the easy number to grab. It's right there on the sheet. Nobody built the yield adjustment into the spreadsheet, so it never got done.

What to Do This Week

Pick your three most expensive ingredients. Most likely candidates: your primary protein, your most-used produce item, and whatever you buy in the largest volume.

Run a yield test on each one. Write down the real EP cost. Update your costing system.

Then pull up your top-selling menu item and recalculate its cost with the corrected numbers. If the cost jumps by more than a few percent, you've been underpricing it.
